Egg and Avocado Toast

Avocado toast has become one of my favorite breakfast foods.  It's filling and delicious, while also being quick and easy.
This is our favorite version of this yummy meal.






















You will need 2 slices of bread, 1 avocado, 1 tomato, garlic and herb Feta, and 2 eggs.
















Start by cooking your eggs however you like them. We like to do either poached or fried. While the eggs are cooking, prepare the rest of the ingredients. Mash the avocado and add some salt and pepper to taste. 


Toast your bread and spread half of the avocado mixture on each slice.



















Slice your tomato and add several slices to each toast.


Next sprinkle the garlic and herb Feta on top.  Regular Feta works, but the garlic and herb flavor is our favorite with this.  


Once the eggs are cooked, add one on top of each slice and you're all set.
 


This hearty and healthy breakfast is the perfect way to start your day!  



















Egg and Avocado Toast

Ingredients (for 2 servings):
2 slices of good quality bread
1 small avocado
salt and pepper to taste
1 roma tomato
1/4 cup. garlic and herb Feta
2 poached or fried eggs

Directions:
Cook the eggs whichever way you prefer. While the eggs are cooking, prepare the rest of your ingredients. In a small bowl, mash the avocado and add salt and pepper to taste.  Toast your bread and spread 1/2 the avocado mixture on each slice.  Slice your tomato and layer on top of the avocado.  Sprinkle 2T of Feta on top of the tomatoes.  Once the eggs are cooked add them on top of the Feta and Enjoy!
