Chocolate Macadamia Milkshale

 Nic and I went on a couples trip to Kauai. Our room wasn't quite ready when we arrived so they gave us credit at the bar. Since we don't drink, we are new to finding fun drinks at the bar. It wasn't on the menu but based on other items on the menu I asked if they could make me a chocolate macadamia smoothie. They made it for me and as they handed it to me one of the men at the bar asked what the bar tender what drink I had. Afterwards, the bartender told me all 4 of the guys ordered the drink (but added alcohol). Cracked us up they I started a little trend.

Once we got home, I couldn't find a recipe for a Chocolate Macadamia Milkshake but was determined to make one. 


Chocolate Macadamia Milkshake

Serves 4

1 C Milk (whole milk makes it richer but I also do skim)

1 1/13 Heavy Cream

1/2 cup Sugar

2 C ice

1 Cup Macadamia Nuts (I usually do an overflowing cup using the Costco bag of whole nuts if the nuts are chopped or you don't want us nutty add less like 1/2 Cup)

2 T Hot fudge (I have often done chocolate syrup which also tastes great the hot fudge just takes it up a notch)

Add all ingredients to a blender and blend until smooth.

Chocolate M&M Cookies

I love chocolate cookies, and chocolate cookie dough. :) These cookies will not disappoint if you like soft cookies! And I won't blame you if you eat all of the cookies dough before any of it makes it into the oven.














There is vanilla pudding in the mix, which helps make these cookies soft and chewy instead of crunchy.

I use the brand Jello:














I generally get one of the larger boxes and put it in a Tupperware container, so I always have vanilla on hand when I make cookies and the vanilla doesn't go to waste.

We are kind of obsessed with our silpat in our home, and use it for cooking everything, especially cookies, if you don't have one I highly recommend them.




















Chocolate M&M Cookies
Recipe by Prescriptions for a Happy Home

1/2 c softened butter
1 c sugar
1 egg
1/2 tsp vanilla
1/2 tsp baking soda
1/2 tsp salt (unless using salted butter like I do. )
2 tablespoons vanilla pudding mix
1/2 c cocoa
1 1/4 flour
1/2 cup chocolate chips
1/2 cup mini M&Ms (regular would work too)


Cream sugar and butter together.. Mix in egg and vanilla. Then add baking soda, salt, vanilla. Slowly add cocoa and flour.

Cook on silpat mat at 350 for 8-10 minutes. Cookies will be soft but with solidify as they sit. Keep on cookie sheet for a couple of minutes.

These cookies only make a couple of dozen, since I have no self control. ;)

I generally make a couple at a time, and then store the dough in an air tight container in the fridge until I make the next batch. Warm cookies every time without becoming a hoarder.

Toasted Coconut Macadamia Nut Cookies

 
White chocolate macadamia nut cookies have always been my favorite.  I decided to add some toasted coconut to them and they were even better!  When I make these for parties, I like to dip them in white chocolate and add some festive sprinkles. Either way they are delicious and sure to be a hit!

Toasting coconut is really simple so don't be afraid to try it! To make toasted coconut you just spread the coconut in a thin layer on a baking sheet covered with parchment paper. I just used the same pan I would be using for my cookies.  
 
Bake for 5-10 minutes or until the coconut is toasted.  It's very important to stir the coconut often to prevent it from burning.  When it's golden brown, remove from oven and let it cool while you make your cookie dough.   


To make the cookie dough cream your butter, coconut oil, sugars, dry pudding mix, and vanilla.  If you don't have coconut oil you can just use all butter. 
 
Add two eggs and mix well.














Add the flour, baking soda and salt.  Mix until flour is blended in.  

Lastly add all the good stuff!  Gently mix in the toasted coconut, macadamia nuts, and white chocolate chips.  

 Roll into 1 or 1 1/2 inch balls and place on your baking sheet.  

Bake for 9-11 minutes or until they start to turn golden brown.


Remove to wire racks and allow to cool.


The cookies taste amazing at this point and you can totally stop here.  But if you want them to look even more impressive you can melt some of these lovelies and dip half of each cookie in them.  


Add some sprinkles or some extra toasted coconut and allow the chocolate to harden on some parchment or waxed paper.

Toasted Coconut Macadamia Nut Cookies

Ingredients:
1/2 c. butter, room temperature
1/2 c. coconut oil (if you don't have coconut oil you can just use butter)
3/4 c. brown sugar
1/4 c. sugar
1 small box of instant vanilla pudding
1 tsp. vanilla extract
2 eggs
2 1/2 c. flour
1 tsp. baking soda
1/4 tsp. kosher salt
1 c. toasted coconut 
1 c. roughly chopped macadamia nuts
1 c. white chocolate chips
optional:
white dipping chocolates
sprinkles or additional toasted coconut


Directions:
Preheat the oven to 350.  Spread the coconut in a thin layer of a baking sheet. Bake for 5-10 minutes or until the coconut is toasted.  Stir often to prevent coconut from burning.  When golden brown, remove from oven.  Set the oven to 375 and start making your cookie dough.

Cream the butter, coconut oil, sugars, dry pudding mix and vanilla. Add eggs and mix well.  Add the flour, baking soda and salt.  Mix well.  Add the toasted coconut, nuts and white chocolate chips. Stir just until combined.  Roll dough into 1 or 1 1/2 in balls.  (If you're dipping the cookies in chocolate after baking, roll the dough into 1/2 in balls)
Bake at 375 for 9-11 minutes. Or just until the center of the cookie starts to turn golden brown.  Remove to wire racks and allow to cool.

If desired, melt white dipping chocolates in a microwave for 1 minute.  Stir and repeat in 10 second intervals until all the chips are melted.  Dip half of the cookie in the chocolate and add sprinkles or coconut.  Place the cookies on parchment paper and let the chocolate harden.  

Makes 3-4 dozen cookies

S'mores Treats























I made these fun S'mores Treats for a party a few weeks ago and they were a hit.  This are simple and so perfect to bring to any summer party!

Instead of using Rice Krispies I used Golden Grahams so they would taste more like a S'more.  You will need Golden Grahams, marshmallows, and butter.






















Melt the marshmallows and butter in a microwave bowl for 1 1/2 minutes.  Stir, if the marshmallows are not completely melted, microwave in 30 second intervals until completely melted. You could melt them over low heat on the stove if you'd prefer that way instead.

Add the marshmallow mixture to the cereal and mix well.  Add some mini chocolate chips and marshmallow bits and mix well.  I love these Mallow Bits that you use for hot cocoa.  They are too cute and perfect for this with the mini chips!  


Spread the treat mixture into your prepared pan.  

















Sprinkle some more mini chips and marshmallows on top.  I also used some chocolate sprinkles I had.

















Let the treats cool and then cut into bars and serve.

S'mores Treats

Ingredients:
8 cups golden graham cereal
1 10 oz. bag of marshmallows (about 40 large marshmallows or 4 c. mini marshmallows)
5 T. butter, divided
1 c. mini chocolate chips, divided
1 c. marshmallow bits, divided
chocolate sprinkles, optional

Directions:
Prepare a large mixing bowl.  Rub the 2T. of butter all over the bowl to coat. (you probably won't need to use all 2T. of the butter)  Add the cereal and set aside.  Also prepare a 9x13 pan with cooking spray or with additional butter.  Melt the marshmallows and 3T. butter in a microwave bowl for 1 1/2 minutes.  Stir, if the marshmallows are not completely melted, microwave in 30 second intervals until completely melted.  Add the marshmallow mixture to the cereal and mix well.  Add 3/4 c. each of mini chocolate chips and marshmallow bits and mix well to combine.  Spread the treat mixture into your prepared pan.  Sprinkle the remaining 1/4 each of mini chips and marshmallows and chocolate sprinkles, if desired, on top.  Let the treats cool and then cut into bars and serve.

Grill Cake- Perfect for Father's Day!


Father's Day is this Sunday! This grill cake is perfect for Father's Day. I first made this as a birthday cake for my husband a few years ago when he got really into grilling.  The best thing about this cake is that you actually don't need any fancy cake decorating tools to make it and it's a lot of fun to put together.  You can even just use a cake mix and store bought chocolate frosting to make it even easier.
First bake the cake.  Feel free to use your favorite cake recipe or even a store bought cake mix in a 9x13 cake pan. After it is cooked, let it sit in the pan for a few minutes and then remove to a wire rack to cool.  Once the cake is cool, transfer it to a serving platter. If you don't have a serving platter that works, you can cover a piece of cardboard with aluminum foil.  Frost the cake with your favorite homemade or store bought, chocolate frosting.  Don't worry about the frosting looking perfect, you are going to cover most of it up with other stuff.  
For the grill grates use some black licorice. 

Outline the cake with the licorice.  Cut the licorice pieces to the desired size. 
Then add licorice in a grid pattern to look like grill grates.  They don't have to be perfect or evenly spaced. 
 
Now comes the fun part! Making hamburgers, hot dogs and veggie kabobs out of candy! Feel free to use whatever combination you want.  I like to do a little of all three, but you can customize it however you want. 

To make the "veggie kabobs" you will need some bamboo skewers and some gummy fruit slices.
 

Cut the fruit slices in half  and cut the skewers in half. Use the pointed half of the skewer and add one of each color (or whatever colors you want) of candy slices to it. 

To make "hot dogs"  you will need some tootsie rolls and red starbursts.  If you have a grocery store that has bulk candy in bins, you can just get the amount you need for all of the candy items.     
 

Unwrap 4 tootsie rolls and two starbursts and place them on some waxed paper.
 

Melt in the microwave for 10 seconds.  It will be hot.  Once it it cool enough to handle, mix the two together to get a uniform color. 
 

Shape into a hot dog.

To make the "hamburgers" you will need Cocoa Krispies, large marshmallows, butter and cocoa powder. 
 

You melt the butter and marshmallows in a microwave safe dish for 1 minute and then stir.  If the marshmallows aren't melted keep microwaving at 10 second intervals or until it is all melted together.  Add your cocoa powder and stir.  Then add the cocoa krispies and stir well. 

Shape into "hamburger patties" and add to the rest of your grilling items. 

If you want to add grill marks to the food use some black frosting.  I like to buy this kind, but you could make your own too.  


Use the frosting to make three grill marks on the hamburgers and hot dogs. 

With the rest of the the black frosting you can spread it around the sides of your cake to make it look like the side of a grill.  I don't always do this step, but you can if you like. 
 


























Arrange your veggie kabobs, hot dogs and hamburgers on the grill.  I originally only made two veggie kabobs, but I decided to make one more once I was putting them on the cake because I thought it looked better.  You can make any variety and amount of each grill item.  Just have fun!  My kids love to help with this part.


Now you've got an awesome grill cake that every guy is sure to love!  The thing I love about this cake is that it just takes a little time to make everything out of candy and it looks pretty great. Send us your pictures if you make this.  We'd love to see your creations!  




Grill Cake

Ingredients:
1 9x13 cake, any flavor you'd like, baked and cooled
1 1/2 cups chocolate frosting, store bought or homemade
1 bag black licorice
8 rainbow fruit slices*
3 bamboo skewers
8 small tootsie rolls
4 red starbursts
1 1/2 cups cocoa krispies
12 large marshmallow
1T. butter
1tsp. cocoa powder
1 4oz. tube of black icing, optional

Bake your cake according to the recipe.  Once cooked, allow to cool in the pan for a few minutes and then carefully remove to a wire rack to cool.  Once cooled, transfer to your serving plate.  (You could wrap a piece of cardboard with aluminum foil if you don't have a serving plate that works)  Frost the cake with chocolate frosting.  It's doesn't have to look perfect, because you will be covering a lot of it up anyway.  Use the black licorice to outline the cake.  Cut the pieces so they fit together how you need them to.  Make the grill grate by arranging the licorice in a grid pattern on the cake.  To make the grilling items follow these instructions:

Veggie kabobs (makes 3)- cut the fruit slices and bamboo skewers in half.  Using the half of the bamboo skewer with the pointed end, add 4 fruit slices to each skewers.  

Hot dogs (makes 2)-  For each hot dog take 4 tootsie rolls and 2 starbursts.  Put them on waxed paper and microwave for 10 seconds.  When they are cool enough to handle, use your hands to combine them until there is a uniform color.  Shape into a hot dog.
Hamburger patties (Makes 3)-  Melt the marshmallows and butter in the microwave for 1 minute. Stir well.  If the marshmallows aren't melted, microwave in 10 second intervals until they are. Add the cocoa powder and stir well.  Then add the cocoa krispies and mix well.  When cool enough to handle, shape into patties. 

Use the tube of black frosting to make grill marks on the hamburgers and hot dogs or spread it along the sides of the cake to make it look like the sides of the grill, if desired.   Arrange the kabobs, hot dogs and hamburgers on top of the cake.

*If you have a grocery store that sells candy in bulk, you can buy just the amount you need of all the candy items and then you won't have to buy so much or have so much leftover candy.
